This is a good sauce to make when you have some good flavoured very red ripe tomatoes.

1 tbsp olive oil

1 small onion, finely chopped

1 large clove garlic, crushed

450g red ripe tomatoes, chopped

A pinch of sugar

Quarter tsp balsamic vinegar

50g sunblush tomatoes , chopped

250g small penne pasta


To make the sauce. Heat the oil in a saucepan. Add the onion and gently simmer for 10 minutes until soft. Add the garlic and fry for one minute. Add the tomatoes, sugar and season to taste. Bring to the boil, then gently simmer for 10 to 15 minutes until the tomatoes have broken down. Whiz the sauce with a blender until smooth, then add the vinegar.

Cook the pasta in boiling salted water until tender. Drain , toss with the sauce and mix in the sunblush tomatoes; MAKES 4 PORTIONS
