Every fortnight, our new columnist Jian Wang, chef, restaurateur of Chop Chop, and mum of two, will be giving us recipes and tips on ways of cooking – not just the exotic, but tips she learned from her mother and father when she was growing up in Northern newGordon and JianeditedChina.

She was a finalist on Channel Four’s The F Word with Gordon Ramsay. Gordon said her dumplings were the best he had tasted in the UK.

Pork & Celery Dumplings

(Serves 2 to 3)

 

Ingredients for filling

200g pork mince

200g celery (you may use another vegetable of your choice)

80g spring onion

40g ginger

8g salt

3 tablespoon vegetable oil

1 tablespoon dark soya sauce

1 teaspoon sesame oil

Ingredients for dough mix

250g plain flour

200ml water

 

Ingredients for dipping sauce

2 cloves crushed garlic

1 tablespoon light soya sauce

½ tablespoon malt vinegar (you may use any vinegar of your choice)
