Every fortnight, our new columnist Jian Wang, chef, restaurateur of Chop Chop, and mum of two, will be giving us recipes and tips on ways of cooking – not just the exotic, but tips she learned from her mother and father when she was growing up in Northern China.
She was a finalist on Channel Four’s The F Word with Gordon Ramsay. Gordon said her dumplings were the best he had tasted in the UK.
200g leg of lamb
3 tbsp vegetable oil
1 level teaspoon salt
Half a teaspoon of chilli powder (optional)
One tablespoon of cumin seeds
Mix all the ingredients together.
TO BARBECUE, place five pieces on each skewer as flat as possible. Barbecue over white hot coal. Sprinkle the sesame seeds on one side, then the other and finally on the first side again and serve.
TO STIR FRY. Place 2 tablespoons of vegetable oil in a non-stck pan and add all the ingredients. Cook for four minutes until browned all over. Add the cumin seeds, toss or stir for ten seconds and serve.
