Every week, our new columnist Jian Wang, chef, restaurateur of Chop Chop, and mum of two, will be giving us recipes and tips on ways of cooking – not just the exotic, but tips she learned from her mother and father when she was growing up in Northern China.
She was a finalist on Channel Four’s The F Word with Gordon Ramsay. Gordon said her dumplings were the best he had tasted in the UK!
This week we have a salad dish that cleanses the palate between meals – but we love it for lunch. Quick and easy to prepare.
CUCUMBER SALAD – SERVES TWO
What you need:
Half a cucumber
Half a carrot
5 sprigs of coriander
2 teaspoons of sugar
1 heaped teaspoon of English mustard
1 level teaspoon of salt
2 teaspoons of malt vinegar
Preparation: Cut the cucumber and carrot into matchstick slices about 6cm long (2.5 inches)
Loosely chop the coriander including stalks to about 3cm long (1 inch)
